Snack – Edamame (Soy Beans)

Ingredients:
Frozen edamame (as much as is desired)
Kosher salt
Garlic Powder
Olive Oil (optional)

Preparation:
Place edamame into a microwaveable bowl. Add salt and garlic powder as desired (these are also optional). Place a plate over the mouth of bowl to seal the opening. Place covered bowl into the microwave and heat 2-3 minutes on medium heat. Allow to remain in the microwave a few minutes to further steam. Remove from the microwave and uncover. Add 2 Tbs. of olive oil, and stir. Serve, utilizing the plate as a place to place discarded shells.

* Olive oil is a healthy fat that is beneficial in regard to improving good cholesterol, and possibly decreasing heart disease risk. It is better to consume unheated olive oil, as olive oil can lose its healthy qualities during heating. I add olive oil (extra virgin olive oil) to the edamame to give me a quick boost of healthy fats. Healthy fats are still fats, so limit your intake. This is not a “more is better” type of thing.
