Recipe – Sweet and Hot Baked Salmon

Ingredients:
– 1 Pound of salmon (thawed or fresh)
– ¼ – ½ of a small onion thinly sliced

Marinade:
– 1 cup of orange juice
– 2 Tbsp. of soy sauce (6-7 shakes from the bottle)
– 2-3 Tbsp. brown sugar
– 1 Tbsp. crushed red pepper (optional)
– Salt (optional)

Preparation:
Place all ingredients into a Ziploc bag. Shake the bag gently to mix the ingredients. Place into the refrigerator for 2-4 hours. Remove ingredients in Ziploc bag from the refrigerator. Preheat oven to 400 degrees. Place all ingredients into non-stick bakeware (I prefer a glass baking dish or corningwear). Be sure that if the salmon has skin, that the skin side is down and the meat is facing up. Cover the dish, and bake for 20 minutes or longer as desired. Remove from the oven. Cool, and serve. When serving, you can pour a bit of the juices from the marinade on top of the fish for more flavor.
